Well marbled, dark and flavorful, the shoulder roast is also commonly known as the Pork Butt, or Boston Butt. This cut comes from the upper part of the pig’s shoulder. Because the shoulder gets a lot of exercise when the pigs are grazing and living in the pasture, the shoulder has a lot of connective tissue and requires long, slow cooking methods to tenderize the meat.
