This Winter 2025 we are temporarily sourcing our chicken from Joe's Farm in MI. The Poultry is processed just across the border in Ohio and then sent to our farm here in Monroe WI. While the product is fantastic and the ethics and protocols of Joe's farm are topnotch, we still prefer to source from closer to home. Early Summer 2025 we should have our first batch of poultry ready from our local Sparrow Hill Farm collaboration. They are a young family doing great work for food similar to us. No matter how you prepare these pasture-raised chicken wings — fried, air-fried, baked, grilled, smoked or slow-cooked — you'll be amazed by the flavor you can only get from chicken raised on the pasture. And you can feel good knowing you're serving a nutrient-dense food raised in a way that rejuvenates the land.
Wings are simple to prepare and easy to cook. Dressed with your favorite sauce or rub, they make a fun finger food for parties and weeknight dinners. And because they have plenty of bone, connective tissue and fat, they also work great when making soups or stocks.
