Nettie's Chicken and Rice
This nutritious, one pan, comfort food recipe is perfect for a family dinner. Great for using pretty much any part of the chicken. If you use your own homemade stock, it really kicks it up a notch!
INGREDIENTS
- 1 1/2 cups jasmine rice
- 2 cups broth
- 3 Tbsp. butter
- 1 onion, chopped
- 2 stalks celery, chopped
- 1/2 tsp. fresh ground black pepper
- 1 tsp. celery salt
- 1/2 tsp. seasoned salt
- 3 Tbsp. chopped fresh parsley
- 2-3 lbs. chicken thighs, drumsticks, or breast pieces.
Spread the rice in a greased 9x13" pan. Evenly spread celery and onion over the rice. Heat broth, butter, black pepper and celery salt until butter is melted. Pour mixture over over rice in pan. Nestle chicken pieces into the pan. Sprinkle chicken with seasoned salt and chopped parsley. Bake at 350 F covered for 1-1.5 hours until rice is fluffy and chicken drums/thighs are 185-195. Enjoy!
