Crustless Ham and Swiss Quiche
An excellent addition to breakfast, brunch, or dinner. And a great way to use leftover ham or put a ham steak to use. Switch it up with your choice of other meats, veggies, and cheeses.

  • 1 1/2 cup diced ham
  • 1 1/2 cup steamed broccoli florets
  • 3 or 4 sliced fresh mushrooms
  • 1 cup grated swiss cheese
  • 2/3 cup milk
  • 1/4 cup half and half
  • 5 eggs
  • salt and pepper to taste
  • pinch of nutmeg


Grease a pie dish. Spread broccoli, ham and mushrooms in the dish. Whisk eggs, milk, half and half, salt, pepper, and nutmeg. Pour over the broccoli. Top with grated cheese. Bake uncovered at 350 degrees for 40 minutes or until the center is set. 

This is a great way to use up leftovers from your holiday ham. Or keep a ham slice on hand for anytime you have a craving for quiche.
