Grass-Fed Lamb Stew
This is a hearty lamb stew made from the farm's 100% grass-fed lamb and pasture-raised bacon that is even more delicious when served with warm biscuits. Our family loves it. I hope yours will too.

Ingredients

  • (1 lb) Lamb stew meat
  • (4 slices) Bacon, Natural smoked
  • (3/4 tsp) Salt
  • (1/2 tsp) Fresh Ground Black Pepper
  • (1/4 tsp) Garlic Powder
  • (3 tbsp) All-Purpose Flour
  • (1) Onion, chopped
  • (2 cloves) Garlic, minced
  • (2 cups) Beef Broth
  • (3/4 cup) Dry Red Wine
  • (1) Bay Leaf
  • (1/4 tsp) Thyme
  • (1 tbsp) Tomato Paste
  • (1 cup) Carrots, chopped
  • (1 cup) Potatoes, chopped
  • (1 cup) Frozen Green Beans

Directions

  1. Heat oven to 325° F.
  2. Cut bacon into 1-inch pieces and lightly fry in a 5-quart dutch oven or heavy pot.
  3. Remove from heat.
  4. Sprinkle the lamb stew meat with salt, pepper and garlic powder.
  5. Mix well and toss with flour.
  6. Fry in bacon grease until browned, 5 - 7 minutes.
  7. Remove from pan and sauté onion. At this point, you may need to add a tablespoon of olive oil.
  8. Sauté for two or three minutes and add garlic.
  9. Stir another minute.
  10. Add red wine and broth, scraping the bottom of the pan to deglaze.
  11. Stir in herbs, potatoes, carrots and tomato paste.
  12. Add bacon and lamb.
  13. Add additional salt and pepper to taste.
  14. Cover and place in oven for 1 hour.
  15. Add green beans and return to oven for 30 minutes.

Enjoy with fresh biscuits.
