Grass-Fed Lamb Stew

This is a hearty lamb stew made from the farm's 100% grass-fed lamb and pasture-raised bacon that is even more delicious when served with warm biscuits. Our family loves it. I hope yours will too.

Ingredients
- (1 lb) Lamb stew meat
- (4 slices) Bacon, Natural smoked
- (3/4 tsp) Salt
- (1/2 tsp) Fresh Ground Black Pepper
- (1/4 tsp) Garlic Powder
- (3 tbsp) All-Purpose Flour
- (1) Onion, chopped
- (2 cloves) Garlic, minced
- (2 cups) Beef Broth
- (3/4 cup) Dry Red Wine
- (1) Bay Leaf
- (1/4 tsp) Thyme
- (1 tbsp) Tomato Paste
- (1 cup) Carrots, chopped
- (1 cup) Potatoes, chopped
- (1 cup) Frozen Green Beans
Directions
- Heat oven to 325° F.
- Cut bacon into 1-inch pieces and lightly fry in a 5-quart dutch oven or heavy pot.
- Remove from heat.
- Sprinkle the lamb stew meat with salt, pepper and garlic powder.
- Mix well and toss with flour.
- Fry in bacon grease until browned, 5 - 7 minutes.
- Remove from pan and sauté onion. At this point, you may need to add a tablespoon of olive oil.
- Sauté for two or three minutes and add garlic.
- Stir another minute.
- Add red wine and broth, scraping the bottom of the pan to deglaze.
- Stir in herbs, potatoes, carrots and tomato paste.
- Add bacon and lamb.
- Add additional salt and pepper to taste.
- Cover and place in oven for 1 hour.
- Add green beans and return to oven for 30 minutes.
