Ham and Green Bean Soup

We got this recipe from some Hutterite friends and it's now a family favorite. Enjoy!

Ingredients

  • 1 large smoked ham hock
  • 14 cups of water
  • 3 bay leaves
  • 1 cup chopped onions
  • 1 clove garlic
  • 1 cup chopped celery
  • 1/4 tsp dill
  • 1/4 tsp ground black pepper
  • 3 cups cubed potatoes
  • 1 cup sliced carrots
  • 1/4 cup all purpose flour
  • 3 cups green beans
  • 2 cups whole milk
  • 1/2 cup half and half
  • 3 sprigs fresh parsley
  • 2 Tbsp chives

Directions

Carve most of the meat off the hock. Put the hock and meat in water and bring to a boil. Turn it to a simmer. In a separate frying pan, fry the onions and garlic. Add them to the pot. Add the bay leaves, dill, and pepper. Cook covered for 30 minutes. Add potatoes, celery, and carrots. Boil 8 minutes. Add flour to ½ cup of cool water and whisk thoroughly. Stir it into the boiling pot. Add green beans and boil another 5 minutes then turn off. Add salt to taste. Wait a couple minutes and then add the milk and cream. Garnish with parsley and chives.
