Sausage Stuffed Acorn Squash

A hearty dinner that combines your meat and veggies into a single dish. Serve with a green salad for a light side.
  • Servings: 4


  • 2 acorn squashes, halved and seeded
  • 1 pound ground sausage
  • 1 cup chopped celery
  • 1/2 cup chopped mushrooms
  • 1/2 cup chopped onion
  • 1 egg, beaten
  • 1/2 cup sour cream
  • 1/2 cup Parmesan cheese


Preheat the oven to 375. Grease a cookie sheet and place squash halves, cut side down, on the tray. Bake until mostly cooked, but not completely. Meanwhile, cook and stir the sausage in a skillet until browned. Add onion, celery and mushrooms. Cook and stir until celery is soft, 5 to 10 minutes. Remove skillet from heat. Beat egg in a large bowl. Stir in sour cream and parmesan cheese. Stir meat mixture into the cheese mixture. Fill sausage halves with cheese and sausage. Return squashes to the oven for 15 to 20 minutes or until filling is cooked through.
